Spicy pickled herring (Inlagd sill)

Ingredients for 4 servings:

  • 3 fish fillets (herring fillets, approx. 450 g)
  • 1 ½ dl water
  • 2 dl sugar
  • ½ onion(s), red
  • ½ carrot(s)
  • 5 grains of allspice, coarsely ground
  • 1 bay leaf
  • ¾ dl vinegar essence (12%)
  • 1 onion(s), red, sliced ​​for garnish
  • 6 grains allspice, whole

Instructions

Working time approx. 20 minutes; Rest period approx. 2 days; Total time approx. 2 days 20 minutes

Heat the water and sugar together until the sugar has dissolved. Let cool. Rinse the herring fillets and pat dry. Peel and slice the onion and carrot, then place them in the sugar solution. Add the bay leaf, crushed allspice, and vinegar essence, and stir. Place the herring fillets in a sealable container and pour the vinegar solution over them. Refrigerate for 2 days. Remove the herring fillets from the vinegar solution (strain and reserve the liquid!) and cut into pieces. Place in a bowl. Add the red onion slices and allspice, and pour about 1/3 of the marinade over them.
