Sweet and sour matjes bites

Ingredients for 4 servings:

  • 8 herring(s) (matjes or salted herring)
  • 2 dl water
  • 3 dl white wine vinegar
  • 125 g honey
  • 1 carrot(s), thinly sliced
  • 2 medium-sized red onions, thinly sliced
  • 5 cm horseradish, cut into thin slices
  • 5 cm ginger root, cut into thin slices
  • 2 tsp mustard seeds
  • 1 tsp, heaped cardamom seeds
  • 1 tsp, heaped allspice berries

Instructions

Working time approx. 30 minutes; Rest period approx. 2 days; Total time approx. 2 days 30 minutes

Scandinavian style

If using salted herring, wash and skin them, then soak them in cold water for 12 hours. Then rinse them under running water and cut into approximately 3 cm pieces. If using matjes (preferably Dutch matjes), cut them into 3 cm pieces. For the marinade, bring the water and vinegar to a boil, let it cool slightly, and stir in the honey. Layer the herring pieces, carrot slices, onion rings, horseradish, and ginger slices in a glass jar. Scatter the mustard, cardamom, and allspice seeds between them and pour the cold vinegar mixture over them. Make sure everything is covered. Let it marinate in the refrigerator for 2-3 days.
