Ingredients for 1 servings:

  • 1,250 g potatoes, peeled and quartered
  • 130 g butter, room temperature
  • 120 ml cream
  • 1 ½ tbsp brown sugar
  • 1 tsp salt
  • 360 g flour
  • Butter for spreading
  • Cinnamon – sugar for sprinkling

Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes

Norwegian pancakes, makes about 20 pieces

Boil the prepared potatoes for 20 minutes. Let cool. Mash the potatoes, stir in 130g butter, 1.5 tbsp sugar, salt, and cream. The dough should form a smooth dough. Refrigerate overnight, uncovered. The next day, knead in the flour, form into approximately 20 portions, and roll out. Bake in an ungreased pan over medium heat until golden brown. Brush with butter, sprinkle with sugar and cinnamon, and roll up. Also suitable for freezing.
