Ingredients for 2 servings:

  • 1 herring
  • 6 small potatoes (triplets)
  • 1 small bunch of parsley, finely chopped
  • 2 tbsp mayonnaise
  • 1 small piece(s) of leek, finely chopped
  • ¼ onion(s), red, finely chopped
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Boil the potatoes and let them cool. Halve the potatoes and scoop out the insides with a spoon. Finely mash the scooped-out potato mixture and mix with the parsley, onions, leeks, and mayonnaise. Season with salt and pepper. Fill the scooped potatoes with the mixture and arrange the strips of herring fillet on top.
