Ingredients for 1 servings:

  • 200 g cream cheese, 0.2% fat
  • 200 g butter, soft
  • 200 g flour
  • 50 g sugar
  • 300 g walnuts, finely chopped
  • 1 egg(s)
  • 75 g honey
  • Flour for rolling out

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 30 minutes; Total time approx. 3 hours

Russian walnut cookies with cream cheese

Beat the cream cheese and butter with a hand mixer until creamy. Add the flour and sugar and knead into a ball of dough. If the dough is too sticky, add a little more flour. Chill in the refrigerator for 2 hours. For the filling, mix the walnuts with the egg and honey. Add a little water if necessary until the mixture is smooth. Preheat the oven to 200 degrees Celsius. Divide the dough in half, roll it out on a well-floured surface with a rolling pin into a rectangle measuring approximately 21 x 35 cm, and cut out about 15 small squares with edges measuring approximately 7 cm. Place a little filling on each square. Fold the dough together at two opposite corners, press down slightly on top, and place on two baking sheets lined with baking paper. Bake in the preheated oven for about 12 minutes until light brown.
