Ingredients for 5 servings:
- 5 potatoes, boiled
- 5 eggs, hard-boiled
- 1 cucumber(s)
- 500 g sausage (poultry)
- 1 bunch of radishes
- 5 spring onions
- 1 small bunch of dill
- Mineral water, carbonated
- 2 cups whipped cream
- 1 cup crème fraîche
- salt and pepper

Cold Russian summer soup
All ingredients are diced or finely chopped, seasoned with salt and pepper, then topped with the whipped cream, crème fraîche, and a little mineral water (about 200 ml, to create a soup). Season to taste and serve cold. At home, everything is done by taste, so we allow one potato, one egg, and 100 g of sausage per person, with everything else roughly equal. You might want to use less radishes, as they’re quite dominant. The mineral water adds a fresh flavor, so don’t leave it out!
