Ingredients for 1 servings:

  • 125 g sugar
  • 125 g flour
  • 3 eggs
  • 1 tsp baking powder
  • 1 pinch of salt
  • 150 g sour cream
  • 125 g sugar
  • 200 g butter, soft
  • 150 g sour cream
  • 50 g butter
  • 100 g sugar
  • 4 tbsp cocoa powder
  • 100 g dark chocolate

Russian cake consisting of layered biscuits

The Russian turtle cake consists of cookies layered with buttercream and covered with chocolate icing. It tastes somewhat reminiscent of Lucullus/Cold Nose, but is considerably more impressive. For the cookies: Mix the sugar, flour, eggs, baking powder, and salt well with a mixer. Use a teaspoon to place dollops about 5 cm in diameter on a baking sheet lined with baking paper. They will rise to 8 cm during baking. Bake in a preheated oven at 180°C for about 10 minutes, until golden brown. Makes about 3 baking sheets. For the cream: Mix the sour cream, sugar, and softened butter (take it out of the refrigerator 3-4 hours beforehand) until smooth and creamy. For the icing: Bring the sour cream, butter, sugar, cocoa, and dark chocolate to a boil in a saucepan, stirring constantly, and then let it cool slightly. Arrange a layer of cookies on a round plate. Then spread the buttercream on the bottoms of the remaining cookies and place them staggered on top of the arranged cookies. This creates a mountain that resembles a turtle shell. You can also drizzle some chocolate icing on the layers in between. Finally, pour the remaining icing over the entire mountain of cookies to ensure it is completely covered. Let the cake rest overnight in a cool place—but preferably not in the refrigerator. In Russia, dessert usually consists of cakes, tarts, and cookies. Tea is served with the cake.
