Shchi – Russian sauerkraut soup

Ingredients for 6 servings:

  • 750 g sauerkraut
  • 700 g minced meat, half and half
  • 2 tbsp oil
  • 3 m.-sized onion(s)
  • 2 liters of beef broth
  • 2 tsp caraway powder
  • 1 bottle of tomato ketchup, approx. 370 g
  • 2 tbsp, heaped paprika powder, sweet
  • 1 tbsp, leveled cayenne pepper
  • 2 bay leaves
  • 3 allspice berries
  • 2 cloves garlic
  • 1 cup sour cream
  • 5 dashes Worcestershire sauce
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

Chop the onions. Heat the oil and fry the minced meat. Then fry the onions, pepper, salt, and caraway seeds until translucent. Then chop the sauerkraut, add it, and fry for about 5 minutes. Now add the ketchup, finely chopped or crushed garlic, bay leaves, and allspice berries. Pour in the broth and simmer with the lid on for 45 minutes. Finally, season with paprika, cayenne pepper, and Worcestershire sauce. Stir in the sour cream or sour cream before serving.
