Ingredients for 1 servings:
- 8 large eggs, separated
- 100 g sugar
- 75 g flour
- some vanilla or almond extract

Preheat the oven to 180°C. Beat the egg yolks and sugar until frothy. Sift in the flour in batches and fold in with a large spoon along with the extract. Using a clean whisk, beat the egg whites until stiff peaks form. Stir 2 or 3 tablespoons into the egg yolk mixture, then fold in the rest in three batches. Pour the batter into a non-stick 20cm springform pan and bake for 15-20 minutes, until it springs back when pressed and is light brown. Let cool for a few minutes, then carefully remove from the pan and let cool completely on a wire rack.
