Ingredients for 20 servings:
- 500 g puff pastry (frozen)
- 8 eggs, including the yolk
- 200 g sugar
- 1 tsp lemon(s) – peel, untreated
- 5 dl cream
- 2 tsp flour
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Thaw the puff pastry and cut into 0.5 cm wide and 3 cm long strips. Roll these into a snail shape and place them on the bottom of small baking cups, then press the dough into the cups. For the custard, beat the egg yolks. Put the cream, sugar, lemon zest, and egg yolks in a saucepan and heat over low heat. Just before it boils, add the flour dissolved in a little cream and stir until the custard thickens. Simmer gently for a few minutes and remove from the heat. Allow the custard to cool, then fill the cups with the custard. Preheat oven to 250 degrees Celsius (480 degrees Fahrenheit). Bake the cups in the oven until golden brown. Sprinkle with cinnamon, remove from the cups, and enjoy! Makes about 20!
