Ingredients for 6 servings:
- 250 g rice (long grain rice)
- 100 g butter
- 4 tbsp sugar
- 1 liter of milk
- 1 vanilla pod(s)
- 1 tsp lemon(s), untreated, grated peel
- 1 stalk(s) cinnamon
- 1 pinch of salt
- 6 egg yolks
- Cinnamon, ground
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Place the rice in a saucepan and cover with 2 cm of water. Bring to a boil and simmer uncovered for about 6 minutes. Drain the water and return the rice to the pan. Add the diced butter, milk, and sugar. Split the vanilla pod and scrape out the seeds. Mix both ingredients into the rice. Bring the rice mixture to a boil, then reduce the heat and only add the lemon zest when it is very gently simmering. Add the cinnamon stick. Let the rice pudding simmer for about 20 minutes, stirring occasionally. Remove the pan from the heat. Remove the cinnamon stick and vanilla pod. Whisk 6 egg yolks with a pinch of salt and quickly stir into the rice pudding. Ladle the rice pudding into one large or several small dessert bowls. Enjoy hot or cold. Sprinkle with cinnamon before serving.
