Portuguese green bean soup

Ingredients for 6 servings:

  • 600 g potatoes
  • 1 carrot(s)
  • 200 g beans, green
  • 2 tbsp olive oil
  • Salt

Green pea soup

Prepare the beans and cut them into small pieces (about 2 cm). Wash, peel, and dice the potatoes and carrot. Cook the beans in salted water until tender, drain, and set aside. Cook the potatoes and carrot in salted water until tender, then puree them. Drizzle with olive oil and season with salt. Add the green beans and bring back to a boil. Serve hot! My mother-in-law always adds fatty pieces of meat and bones to the potato water and fishes them out before pureeing. But then it’s no longer vegetarian! This is my absolute favorite soup when I’m at her house.
