Bavarian pretzels – beer soup

Ingredients for 4 servings:

  • ½ liter of beer (dark bock beer)
  • 2 onions
  • 2 tbsp butter
  • 1 roll(s) (pretzel roll)
  • 1 roll(s), (milk roll) stale
  • ½ liter meat broth
  • Chives, chopped
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Dice one onion and sauté it in butter until translucent. Briefly toast the grated bread rolls and deglaze with the meat broth. Cover and simmer over low heat for about 10 minutes. Stir occasionally. Add the beer and simmer for another 10 minutes. Meanwhile, peel the second onion, slice it into rings, and fry it in hot fat until browned. Add the onion rings to the soup, season with salt and pepper, and serve sprinkled with chives.
