Vegetarian potato goulash

Ingredients for 2 servings:

  • 400 g potatoes, cut into cubes
  • 500 g bell pepper(s), cut into pieces
  • 1 m.-sized onion(s)
  • 1 can of mushrooms
  • 1 can tomato(s), (Pizza tomatoes, 400 g)
  • 50 g cream cheese with herbs
  • 50 g cheese, grated
  • 200 ml vegetable stock
  • salt and pepper
  • Paprika powder
  • oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Fry the onion in a little oil, add the diced potatoes and fry briefly. Pour in the vegetable stock and simmer on low heat. After ten minutes, add the bell peppers and mushrooms (reserving the mushroom juice will make the dish more soupy). After another five minutes, add the pizza tomatoes and cook. After a total of 20 minutes, the potatoes should be tender. Then stir in the cream cheese and season with salt, pepper, and paprika. Finally, stir in the grated cheese until melted. Using low-calorie cream cheese and grated cheese, the dish is also low in fat.
