Qußa b'seits – zucchini – mint – puree

Ingredients for 6 servings:

  • 1 onion(s)
  • 4 small zucchini
  • 2 lemons, juice
  • 2 tbsp olive oil
  • 1 bunch of mint
  • Salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

For lovers of oriental cuisine, this is a nice addition to a mezze starter

Finely dice the onion and sauté in the olive oil. Finely dice the zucchini and add it. Add the juice of both lemons. Cover and simmer over very low heat until the vegetables are soft. Roughly chop the mint and let it cook for a few minutes. Puree the vegetables and season with salt and, if desired, fresh mint. Serve cold with flatbread. Garnish the puree with whole mint leaves.
