Caramelized carrots with peppers

Ingredients for 4 servings:

  • 6 carrots
  • 3 garlic cloves
  • 1 tsp sweet paprika powder
  • 1 tsp sugar
  • 60 ml water
  • 1 tbsp vinegar (red wine vinegar)
  • Salt
  • 1 tbsp parsley, freshly chopped flat

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the carrots and slice them thinly. Finely chop the garlic. Cover the carrots, garlic, paprika, sugar, and water in a small saucepan and heat gently. Simmer over medium heat for 12-15 minutes, until the carrots are lightly caramelized. Add the vinegar and simmer for another minute. Remove from the heat and season with salt. Arrange the carrots in a bowl. Sprinkle with parsley after cooling and serve.
