Ingredients for 4 servings:
- 350 g noodles, Asian, e.g. Udon or Sōmen, amount as required
- 4 large carrots
- 3 spring onions
- some shiitake mushrooms
- some ginger
- 1 small shallot(s)
- 4 garlic cloves
- 8 slice(s) of meat, variety as desired
- 4 eggs
- 3 tbsp, heaped curry paste or chili paste
- 3 tbsp, heaped miso paste
- 4 tbsp sake
- some pepper, white
- 4 tbsp soy sauce
- 2 liters of broth
- some coriander
- sesame oil
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour
Cut the vegetables and mushrooms into small cubes and sauté in sesame oil. The mushrooms can be a bit larger. Reserve some of the spring onions and carrots for garnish. Add the curry paste and miso paste, deglaze with broth, and simmer. Season to taste with white pepper, coriander, soy sauce, and sake. Sear the meat in the pan and set aside. Cook the noodles according to the package instructions and simmer in the soup for another 10 minutes. Boil the eggs until soft-boiled. Serve everything in 4 bowls.
