Japanese sweet scrambled eggs

Ingredients for 2 servings:

  • 3 eggs
  • 2 tbsp sugar
  • 1 ½ tsp soy sauce
  • ¼ tsp salt
  • 3 tbsp Dashi, tastes good without
  • 1 tbsp sake, can also be omitted

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Mix all ingredients in a bowl. Meanwhile, heat the oil in a pan (square if you have one). Then add a small amount of the scrambled egg mixture to the pan, just enough to cover the bottom. As soon as the mixture begins to set, roll it up from one side like a carpet. With a little finesse, this also works in a round pan. Once the roll is seared on all sides, remove it from the pan and cut into sushi-sized portions with a sharp knife. Repeat the process with the remaining egg. It’s a great accompaniment to sushi.
