Ingredients for 2 servings:

  • 4 eggs
  • 1 pinch(s) white pepper
  • 1 pinch of salt
  • 1 tsp sugar
  • 2 tbsp Mirin from the Asian market
  • 2 tsp soy sauce
  • oil

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Japanese rolled omelets, a simple side dish for Bento lunchbox

In a bowl, whisk together the eggs, salt, sugar, white pepper, mirin, and soy sauce. Heat a frying pan over medium heat and use a brush to spread the oil evenly over the pan. Pour a quarter of the egg mixture into one half of the pan and slowly let the egg set. When the bottom of the omelet sets, wrap or roll the egg from the edge. The top of the omelet should always be runny so that the omelet sticks together. Pour another portion of the egg mixture into the pan. Once the bottom is set, continue rolling the omelet. Repeat this process until all the egg is gone. Finally, cook each side for one minute. Remove the rolled omelet from the pan, place it on a board, and slice it as desired.
