Apricot salad Greek style

Ingredients for 1 servings:

  • 3 apricots
  • 1 handful of arugula
  • some sauce (mango curry sauce)
  • 1 handful of cherry tomatoes
  • 1 pack of sheep’s cheese, approx. 200 g
  • some olives, black
  • e.g. balsamic vinegar
  • e.g. olive oil
  • e.g. salt and pepper
  • n. B. garlic

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash, trim, and chop the vegetables and fruit. Slice the olives. Halve the apricots and cherry tomatoes. Thinly slice the feta cheese and crumble or leave it whole. Fill the apricots with the mango curry sauce. Arrange the arugula on the plate as a base and top with the remaining ingredients to taste. Drizzle with balsamic vinegar and olive oil and season with salt, pepper, and garlic. Approx. 170 kcal per serving.
