Ingredients for 4 servings:
- 1 m.-sized melon(s) (cantaloupe or honeydew melon), diced
- 3 tomatoes, cut into thin segments,
- 50 g olives, black, pitted
- 1 cucumber(s), peeled, diced
- 1 lemon(s), the juice
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tbsp mint, fresh
- salt and pepper

Place the melon cubes in a salad bowl along with the tomatoes, olives, and cucumber cubes and toss to combine. Then add the lemon juice, olive oil, honey, mint, salt, and pepper, mix well, and let it sit until ready to serve (chill if necessary). It tastes super refreshing and goes well with Greek dishes, as a side dish for barbecues, or simply with bread, etc.
