Warm leek salad Welsh style

Ingredients for 4 servings:

  • 6 stalk(s) leeks
  • ½ bell pepper(s), green
  • ½ red chili pepper(s)
  • 100 ml olive oil
  • 100 ml vinegar (red wine vinegar)
  • 1 tsp brown sugar
  • 1 tsp coarse-grained mustard
  • 450 ml vegetable stock
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Bring the vegetable stock to a boil. Trim the leek and slice it into 5 cm thick rings. Simmer in the vegetable stock for 15 minutes until soft. Meanwhile, finely dice the bell pepper and chili. Prepare a vinaigrette from the bell pepper, chili, oil, vinegar, sugar, mustard, salt, and pepper. Drain the vegetable stock. Drizzle the vinaigrette over the leek and serve lukewarm. This salad is not only delicious, but also quick and easy to make, making it a wonderful starter for guests who want something different.
