Ingredients for 4 servings:
- 500 g asparagus, green
- 6 tbsp olive oil
- 3 tbsp balsamic vinegar
- Salt and pepper, black from the mill
- 1 piece(s) Parmesan

warm green asparagus salad with Parmesan shavings
Trim the woody ends of the asparagus, drizzle the stalks with about a tablespoon of oil, and either fry in a griddle pan until al dente or grill on a charcoal grill until al dente. Transfer to a platter and drizzle with the remaining oil and balsamic vinegar. Sprinkle with salt and pepper and grate Parmesan cheese. This makes a lovely appetizer with ciabatta for 4 people, or a great vegetable side dish for 2. It’s also delicious cold, once the dressing has infused.
