Fried asparagus with pumpkin seed oil

Ingredients for 4 servings:

  • 800 g asparagus
  • 2 tbsp pumpkin seed oil
  • 1 tbsp olive oil
  • 1 pinch(s) of sugar
  • 1 shot of balsamic vinegar
  • salt and pepper

Cut the peeled asparagus into pieces and fry in hot oil, turning frequently, until lightly browned. Depending on the thickness of the asparagus spears, cooking in the pan can take 10-15 minutes. Season with salt and pepper, deglaze with balsamic vinegar, and bring to a boil once. Serve lukewarm or cold. It also works well with green asparagus, which has the advantage of requiring little peeling. Served with a green or mixed salad, or with seafood, it also makes a light main course.
