Don Diego's Greek red cabbage salad

Ingredients for 6 servings:

  • 1 m.-large red cabbage, finely grated
  • 2 apples, finely grated
  • 2 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 2 tbsp horseradish, cream
  • 3 tbsp sugar
  • 5 tbsp olive oil
  • salt and pepper

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Apple and red cabbage salad with a hint of creamed horseradish

To clarify: This salad doesn’t contain feta cheese, but it’s still Greek, even though it can be prepared anywhere in the world. (Red) cabbage salads are a typical winter salad in Greece. Grate red cabbage and apples (cored) in a food processor and mix them together. For the dressing, dissolve or mix the Dijon mustard, creamed horseradish, sugar, salt, and pepper in the red wine vinegar, then mix with the olive oil (hopefully Greek!!!). Pour the dressing over the salad, mix well, and let it marinate in the refrigerator for at least an hour.
