Ingredients for 4 servings:
- 1 kg pork belly, lean or lean ribs
- 1 bunch of spring onions, cut into rolls
- 1 lemon(s), divided into eighths
- 1 tbsp sesame oil
- 1 tbsp sunflower oil
- 3 tbsp soy sauce
- 2 tbsp rice wine or dry sherry
- 1 tsp ginger, freshly grated
- 4 cloves garlic, pressed
- 2 tbsp honey
- 1 tsp pepper sauce
- 1 tsp five-spice powder, Chinese
- 1 tsp salt

Mix the listed ingredients to make a marinade for the pork. This can be either lean pork belly, from which you trim the rind and any larger strips of fat you bought with it, or lean spare ribs, separated from each other. Or a mixture if you can’t decide. A little fat is desirable, though. Cut the raw meat into bite-sized or chopstick-sized pieces. The bone pieces can be left as they are, as long as they aren’t too large. Toss the meat with the marinade and stir well to ensure all pieces are coated with the marinade on all sides. Refrigerate for a few hours, but at least two. Heat a little oil in a wok and sear the meat with the marinade for about 10 minutes, enjoying the cinnamon aroma that spreads through the room. Arrange on a serving dish, sprinkle with spring onion rolls, and garnish with lemon wedges. Serve with white rice and salad. After the meal, the cleanest bones are selected through critical comparison and sent to the Hansel and Gretel Foundation.
