Ingredients for 2 servings:
- 300 g broad beans (broad beans), peeled, dried (fava beans)
- 2 onions, chopped
- some lemon juice
- 100 ml olive oil
- 1 tbsp salt

The Greek power food
Before cooking the dried beans, you should wash them thoroughly and let them soak overnight in a bowl of unsalted water until they have roughly doubled in size. Then rinse the beans again and bring them to a boil in a large pot with plenty of water, a little salt, and oil. As the water and beans heat, a white foam of starch and protein will collect on the surface. Carefully skim this foam off, otherwise it will quickly boil over. Add half a chopped onion and let the whole thing simmer in the covered pot on medium heat for about 90 minutes. When the fava beans begin to break down, remove them from the heat and let them cool slightly, then puree them in a food processor until smooth. Finally, add a generous splash of olive oil, a little lemon juice, and a small handful of chopped onion to your fava. If you like, you can also add some pickled capers—a perfect match for me.
