Japanese green tea ice cream

Ingredients for 8 servings:

  • ½ liter cream
  • ½ liter of milk
  • 175 g sugar
  • 1 pinch of salt
  • 17 g tea, green powdered tea (Matcha) – available in well-stocked tea shops

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Matcha ice cream, traditional Japanese ice cream!

Stir all ingredients together until the sugar has dissolved. Freeze in the ice cream maker. (Takes about 30-40 minutes.) Be careful with the green tea, though—it tastes *very* intense! (It’s best to measure the 17 g with a postal scale…) The ice cream probably won’t freeze completely in the ice cream maker (since it doesn’t contain eggs). So simply place it back in the freezer for another 30-60 minutes afterward; then it will have a nice consistency and be ready to eat.
