Japanese sweet potatoes with lemon

Ingredients for 4 servings:

  • 500 g sweet potatoes
  • ½ lemon(s), untreated
  • 2 tbsp sugar
  • 1 tbsp soy sauce, Japanese

Working time approx. 40 minutes; Total time approx. 40 minutes

Satsuma-imo no amani

Peel the sweet potatoes and cut into slices about 2.3 cm thick. Soak them in cold water for about 10 minutes (change the water several times to prevent discoloration). Cut the lemon (with peel) into thin (!) slices. Place the drained potatoes in a saucepan. Sprinkle with sugar. Add soy sauce and enough water to just cover the potatoes. Bring the water to a boil and cook the potatoes for about 20 minutes until soft. After 10 minutes, add the lemon slices. Serve the potatoes with the lemon slices and the cooking liquid either hot or lukewarm.
