Ingredients for 1 servings:

  • 400 ml water
  • 13 g agar-agar
  • 650 g sugar
  • 10 tbsp syrup (fruit syrup), various varieties of your choice
  • 10 drops of vanilla extract
  • n. B. food coloring

Japanese dessert Kohakutou, a trend from Japan, fascinating and beautiful

Bring the water and agar-agar powder to a boil, add the vanilla extract, sprinkle in the sugar, and simmer for about 3 minutes. Prepare several small containers, each containing about 2 tablespoons of the desired syrup and a few drops of food coloring. Pour in the hot sugar-agar-agar mixture and mix well. Let it cool in the refrigerator and set. Finally, remove the solid mixture from the molds and cut or tear it into any desired pieces. Original Kohakutou usually taste like nothing or just sweet. I therefore used fruit syrups for flavoring. These are available from various brands such as Tri Top, Riemerschmidt, or Monin. You can also use Wassermaxx syrups. Baking flavorings are also suitable. To give the “jewels” an even more beautiful color, you can add food coloring to give them a shine. Kohakutou are beautiful, sweet “crystals” or “gems,” sweets from Japan. A current YouTube trend that fascinated me and inspired me to try them out. They’re jelly-like when fresh, like very solid jelly, and when dried, they’re crispy on the outside and soft on the inside, similar to banana jelly. Quick to make, they’re great fun at any children’s birthday party or for those with a sweet tooth.
