Braised balsamic tomatoes

Ingredients for 12 servings:

  • 36 cocktail tomatoes
  • 10 sprigs of thyme
  • 2 cloves garlic
  • Sea salt
  • Sugar
  • 3 tbsp balsamic vinegar
  • 4 tbsp olive oil
  • some basil

Working time approx. 10 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 10 minutes

The quantities given are for finger food servings of 12. Preheat the oven to 180 degrees Celsius (convection oven). Wash and dry the cherry tomatoes, then place them in a bowl. Peel and thinly slice the garlic, and add them to the tomatoes. Mix the sugar and salt in the balsamic vinegar. Strip the thyme leaves from the stems and add them. Mix everything well with the olive oil. Pour the sauce over the tomatoes and toss them in. They should be lightly coated. Now braise everything in the preheated oven for 15-20 minutes. The tomatoes should burst slightly. Then let them cool in the liquid. This can be prepared a day in advance. To serve: Place the tomatoes on small plates. Finely slice the basil leaves and garnish the tomatoes with them.
