Tomato and mozzarella skewers

Ingredients for 6 servings:

  • 500 g cherry tomatoes
  • 250 g mini mozzarella
  • 1 bunch of basil
  • 3 tsp pesto alla Genovese
  • 3 tbsp raspberry vinegar or white wine vinegar
  • 6 tbsp extra virgin olive oil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 20 minutes

Prepare a marinade from pesto, vinegar, oil, salt, and pepper. Drain the mozzarella balls and let them marinate overnight. Wash the tomatoes and basil. Alternate a tomato, a basil leaf, a marinated mozzarella ball, another basil leaf, and another tomato on a toothpick. Arrange the skewers on a platter and drizzle with the remaining marinade.
