Ingredients for 1 servings:
- 175 g flour
- 175 g butter
- 175 g sugar
- 3 eggs
- 1 tsp baking powder
- 1 lemon(s), organic, grated peel
- 125 g sugar, for the syrup
- 1 ½ lemon(s), organic, juice and grated peel
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
with delicious lemon syrup crust, for a 20 cm springform pan
Preheat the oven to 180°C. Cream the butter and sugar until fluffy, then add the eggs and lemon zest one at a time. Then stir in the baking powder and flour. Pour the batter into a 20 cm springform pan and bake for about 35 minutes. Meanwhile, heat the lemon juice and lemon zest with the sugar in a saucepan and bring to a boil for 1 minute. Remove the cake from the oven and immediately brush with the lemon syrup while it’s still warm. Allow to cool completely in the pan.
