Bresaola crostini

Ingredients for 4 servings:

  • ½ bunch basil
  • 100 g ricotta
  • salt and pepper
  • 6 cherry tomatoes
  • 12 slices of baguette
  • 12 slices of Bresaola
  • 2 tbsp pine nuts, roasted

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Wash the basil and shake dry. Pat dry 12 attractive leaves and set aside for decoration. Cut the remaining leaves into fine strips and mix with the ricotta. Season the mixture with salt and pepper. Wash and halve the tomatoes. Toast the baguette slices in a toaster or bake in the center of a preheated oven at 250°C (top/bottom heat) for about 4-5 minutes until golden brown. Spread the basil cream over the slices while they are still warm. Place a slice of bresaola on top of each slice. Garnish the crostini with a basil leaf, a few toasted pine nuts, and 1/2 a cherry tomato.
