Bruschetta with cold tomatoes

Ingredients for 4 servings:

  • 500 g tomatoes
  • 1 clove(s) garlic
  • 2 tbsp olive oil
  • ½ tbsp herb vinegar
  • 1 tsp basil (frozen)
  • 1 pack of baguette(s) for baking
  • ½ cup olive oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Preheat the oven to 180°C (top/bottom heat). Chop the tomatoes into small pieces. Crush the garlic. Add to the tomatoes along with the olive oil, herb vinegar, and basil and stir gently. Cut the baguette into thin slices, drizzle with olive oil, and bake in the hot oven until the slices are golden brown. Then top the baguette slices with the cold tomato mixture. The bruschetta tastes especially good with a glass of Chianti.
