Ingredients for 4 servings:

  • 250g tofu
  • 100 g cornstarch (potato flour)
  • 800 ml oil
  • 160 ml dashi
  • 40 ml soy sauce
  • 40 ml mirin
  • 80 g radish(s), grated Japanese
  • 1 tbsp ginger, grated
  • 1 spring onion(s)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Agedashi Tofu

Cut the tofu into 8 cubes, coat in potato flour, and deep-fry in oil. Combine the dashi broth, soy sauce, and mirin and bring to a boil briefly. Place two tofu pieces in each soup bowl and pour the sauce over them. Garnish with radish, ginger, and leek rings.
