Vegan buckwheat patties

Ingredients for 1 servings:

  • 2 handfuls of buckwheat, cooked
  • 1 carrot(s)
  • 1 pointed pepper
  • 2 tbsp chia seeds
  • 2 tbsp flour or more
  • 1 tbsp tomato paste
  • some herbs, e.g. fresh chives and dill
  • Salt and pepper or soy sauce
  • Oil for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Soak the chia seeds in a large bowl with 6 tablespoons of water, stirring occasionally. Grate the carrot and bell pepper into strips. Alternatively, finely dice them and place them in a bowl. Add the cooled, cooked buckwheat. Add the finely chopped herbs and the remaining ingredients and stir. Heat a little oil in a pan over medium heat. Fry the patties for about 5 minutes on each side, until they loosen from the bottom of the pan and can be turned over.
