Fried squid with soy sauce

Ingredients for 2 servings:

  • 2 squid(s), whole with legs, tube approx. 25 cm long
  • 3 tbsp butter
  • 1 tbsp oil
  • 4 tbsp soy sauce
  • 3 tbsp sake (rice wine)
  • 1 spring onion(s)
  • 2 cup(s) rice (sticky rice)

Quick Japanese recipe

First, you should put the rice on, which will then cook away during the rest of the time. Wash the squid and slice the spring onion into thin rings. Some squid species have a cartilaginous keel in the tube; this should be carefully removed beforehand. Melt butter and oil in a non-stick pan and heat. Fry the squid whole for 3-5 minutes on each side. The liquid will run out of the squid and it will curl up a little, so press down frequently. Add the sake, soy sauce and spring onion, reduce the heat and let it reduce for another 2-3 minutes. Cut the squid into chopstick-sized pieces (discard the head, beak, and eyes). Arrange on plates, pour the sauce over the squid, and serve with the rice in a separate bowl. Green tea, sake, or even beer are suitable drinks.
