Apricot scones with white chocolate

Ingredients for 12 servings:

  • 300 g flour
  • 80 g sugar
  • 1 packet of vanilla sugar
  • 2 tsp baking powder
  • 60 g butter
  • 1 egg(s)
  • 130 g cream
  • 180 g white chocolate
  • 100 g walnuts
  • 120 g apricot(s), dried
  • Flour, for working

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

In a large bowl, mix the flour, sugar, vanilla sugar, and baking powder. Sprinkle the butter in small pieces and knead into a crumbly dough. In a second bowl, beat the egg and cream and mix thoroughly into the crumbly dough. Finally, roughly chop the white chocolate and walnuts, finely dice the dried apricots, and knead into the dough. Preheat the oven to 200°C (180°C fan/gas mark 3-4). With floured hands, form the dough into a ball. On a floured surface, shape it into a 5-6 cm thick log. Using a floured knife, cut the log into 12 slices (about 2 cm thick). Place the slices on a baking sheet lined with baking paper and bake for 20-25 minutes until golden brown.
