Irish fruit cake

Ingredients for 4 servings:

  • 150 g butter
  • 125 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 3 eggs
  • 2 tbsp whiskey
  • 100 g marzipan
  • 200 g flour (wheat flour)
  • ½ tsp baking powder
  • 50 g almonds
  • 50 g sultanas
  • 50 g currants
  • 50 g cherry(s), candied
  • 50 g candied orange peel
  • 50 g candied lemon peel
  • 200 g powdered sugar
  • 2 tbsp whiskey

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

First, beat the butter with the whisk attachment of a hand mixer until very fluffy. Then add the sugar, vanilla sugar, eggs, and salt, and continue beating until the eggs have lost their yellow color. Crumble the marzipan mixture, add it to the foam mixture along with the whiskey, and stir in. Preheat the oven to 180°C (top/bottom heat). Then, whisk together the flour and baking powder, then fold into the butter and egg mixture. Add the chopped fruit, raisins, currants, and almonds, and mix well. Finally, pour the batter into a greased loaf pan lined with parchment paper and bake on the middle rack of the oven for 60–70 minutes. For the glaze, combine the powdered sugar and whiskey, and spread over the still-warm cake.
