Miso spaghetti

Ingredients for 4 servings:

  • 500 g spaghetti or other pasta
  • 70 g butter
  • 35 g miso paste, light
  • 2 tbsp black sesame seeds, roasted
  • 1 tsp fish sauce
  • 50 g leaves (perilla, green sesame leaves) or spinach

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Melt the butter in a large pan. Stir in the miso paste. Cook the spaghetti or pasta in salted water until al dente. Add about 150 ml of the pasta water to the miso and butter mixture over low heat and whisk well until a smooth sauce forms. Add the halved perilla or spinach leaves. Season with fish sauce to taste. If you don’t have any or don’t like it, omit it. Add the noodles to the pan, add the sesame seeds, and mix well.
