Burrata with sherry prawns

Ingredients for 2 servings:

  • 180 g shrimp(s), frozen
  • 2 tbsp olive oil
  • 2 garlic cloves, finely diced
  • 1 shot of sherry
  • 4 tomatoes, peeled and diced
  • n. B. Salt and pepper, from the mill
  • 1 bunch parsley, chopped
  • 3 sprigs of thyme, shredded
  • ½ lemon(s), juice
  • 1 burrata

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Rinse the thawed shrimp and pat dry. Briefly fry them in olive oil with the garlic. Deglaze with the sherry. Add the diced tomatoes and season with spices, herbs, and lemon juice. Drain the burrata, divide it among plates, and serve with the shrimp. Serve with crusty baguette. Tip: Good preparation is key. All ingredients should be ready, as the preparation is so quick and the shrimp will otherwise become too tough.
