Oatmeal and feta cheese cookies

Ingredients for 1 servings:

  • 500 g oat flakes
  • 1 ¼ packs of baking powder
  • 1 ½ tsp, leveled salt
  • 3 tsp thyme
  • 50 ml water, warm
  • 150 g butter, melted in microwave
  • 200 g sheep’s cheese, heated in the microwave

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 2 hours 45 minutes

Combine the oats, baking powder, salt, and thyme in a mixing bowl and add the water. Melt the butter in the microwave (2 minutes at 200W) and add it to the mixing bowl, then mix with a mixer. Melt the feta cheese in the microwave (3 minutes at 200W) and add it to the mixing bowl, then mix again with a mixer. Form the dough into 3 square bars on a work surface. Chill the bars in the freezer for about 1.5 hours. Using a sharp knife, cut the bars into cookies about 5mm thick and place them on a baking sheet lined with baking paper. Bake for about 30 minutes at 150°C (convection oven), but do not preheat the oven. Then let it dry for 20 minutes at 100°C (212°F). Remove from the oven, let it cool, place in a cookie tin, and enjoy.
