Ingredients for 4 servings:
- 250 g feta cheese, Greek
- 200 g cheese, grated Gruyère
- 2 eggs, lightly beaten
- 15 pieces of pastry sheets (phyllo pastry sheets)
- 125 ml oil
- 125 g butter, melted
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Preheat oven to 180°C. Mash the feta in a bowl with a fork, mix with the Gruyère, eggs, and a pinch of pepper. Halve the filo sheets crosswise. Cover with a damp tea towel until ready to use to prevent them from drying out. Place one sheet half on the work surface. Mix the oil and butter and brush the sheet with it. Fold it lengthwise into thirds and brush again. Place 1 tablespoon of the cheese mixture on the corner of the pastry strip. Fold this corner over the filling to the edge of the pastry, forming a triangle. Continue folding to the end of the strip until the filling is enclosed. Repeat with the remaining pastry. Place the triangles on a lightly greased baking sheet, brush with the oil and butter mixture, and bake in the preheated oven for 20 minutes until crispy. Serve with a green salad with vinaigrette, if desired.
