Halloumi gratin with tomato and pepper sauce

Ingredients for 4 servings:

  • 250 g Halloumi, sliced
  • 1 red bell pepper(s)
  • 1 can tomatoes, chopped, 400 g
  • 1 m.-sized onion(s)
  • 1 clove(s) garlic
  • 1 tsp sugar
  • 1 tsp, crushed paprika powder, mild
  • ½ tsp cumin powder
  • 3 tbsp olive oil
  • salt and pepper
  • 10 basil leaves
  • 1 tsp thyme

Bake the peppers in a 200°C oven until the skin blisters and turns black. Remove from the oven and let cool slightly in a plastic bag. Peel off the skin, dice the flesh, and set aside. Finely chop the onion and garlic. First, sauté the onion in oil, then add the garlic, paprika, and cumin a little later. Stir through and stir in the diced peppers. After 2 minutes, add the tomatoes, sugar, and thyme, and season with salt and pepper. Simmer for 20 minutes. Preheat the oven to 210°C. Pour the sauce into a baking dish and top with the sliced ​​halloumi. Bake in the oven for about 15 minutes. Garnish with basil leaves and serve.
