Ingredients for 2 servings:

  • 2 chicken breast fillets
  • 1 tsp olive oil
  • 1 m.-sized onion(s)
  • 1 medium-sized garlic clove(s)
  • 1 red bell pepper(s)
  • 100 g zucchini
  • 100 g carrot(s)
  • 100 g mushrooms
  • 50 g sour cream
  • 80 g rice or noodles
  • salt and pepper
  • 1 pack of Italian herbs, frozen

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Bring the sun and aroma of the Mediterranean to your table at home. Low in fat and rich in vegetables, this recipe is perfect for a healthy diet. Prepare rice or pasta according to the package instructions. Trim the vegetables and cut them into bite-sized pieces. Dice the chicken. Heat oil in a pan and brown the chicken. Gradually add the vegetables, starting with the onions, garlic, peppers, mushrooms, carrots, and finally the zucchini. Add a splash of water, cover the pan, and simmer everything on low heat for about 10 minutes. Season to taste with sour cream, salt, pepper, and Italian herbs, and serve with pasta or rice.
