Spread the love

Ingredients for 4 servings:

  • 500 g penne or fusilli
  • 500 g beans, green
  • 1 jar tomato(s), dried
  • ½ onion(s)
  • 100 g Parmesan
  • 2 tbsp pesto, green
  • 100 ml olive oil
  • salt and pepper
  • Cream of balsamic vinegar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Cook the pasta in plenty of salted water until al dente, then rinse briefly with cold water. Halve the beans and cook in salted water for about 5 minutes, then rinse briefly with cold water. Drain the tomatoes well and chop finely, then finely chop the onion. Briefly sauté the onions in a little olive oil in a large, deep pan. Add the pasta and heat briefly. Then add the beans, tomatoes, pesto, and olive oil. Do not heat for too long, or the beans will become too soft. Just before serving, stir in the grated Parmesan cheese, arrange the mixture on warmed plates, and garnish with a drizzle of balsamic vinegar.
