Tortellini with chorizo, apple and cream sauce

Ingredients for 4 servings:

  • 400 g tortellini, fresh
  • 250 g chorizo, cut into about 0.5 cm pieces
  • 1 large apple, diced
  • 2 tbsp tomato paste
  • 1 medium-sized onion(s), diced
  • 2 cloves garlic, thinly sliced
  • 1 small can of tomatoes, peeled
  • 200 ml cream
  • 400 ml sour cream
  • 400 ml milk
  • 1 tbsp honey
  • 2 tbsp Grand Marnier
  • 1 tsp oregano, shredded
  • 1 tsp herbs de Provence
  • 1 tsp basil, fresh or ground
  • Salt and pepper from the mill
  • olive oil

Instructions

Heat the olive oil in a medium-sized saucepan and sauté the onions. Continue sautéing everything, stirring constantly. Once the onions are translucent, add the garlic and sauté briefly. Then add the chorizo ​​to the pan, season with Provençal herbs, and sauté for about 10 minutes. Next, add the apple pieces to the pan and sauté for another five minutes. Add the tomato paste and sauté briefly. Then deglaze everything with Grand Marnier and add the tomatoes. Bring everything to a simmer and add the cream, sour cream, and milk to the pan. Once it starts to simmer again, reduce the heat to medium and add the oregano and honey. Stir and season generously with salt and pepper. The sauce should now simmer for about 1.5 hours, until it has reduced by about 2-3 cm. Don’t forget to stir occasionally. Now add the basil and prepare the tortellini according to the instructions. Once the tortellini are done, the sauce is ready too. Finally, season to taste and serve hot. It tastes best the next day.
