Pasta with apples and ham in cream sauce

Ingredients for 4 servings:

  • 400 g pasta, e.g. spaghettini or angel hair
  • 400 ml cream
  • some olive oil
  • 3 garlic cloves
  • 3 rosemary sprigs, fresh
  • some lemon juice
  • 1 small shallot(s)
  • 2 apples, sour
  • 100 g raw ham (San Daniele or Parma ham)
  • salt and pepper
  • Pecorino or Parmesan, grated
  • some hazelnuts, chopped

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Heat 1-2 tablespoons of olive oil in a small saucepan, add the crushed garlic cloves and rosemary sprigs. Sauté gently for a few minutes, taking care not to let the garlic brown. Deglaze with a squeeze of lemon juice and add the cream. Reduce the cream gently to fragrantize it, then strain it through a sieve. Cook the pasta according to the package instructions. Peel the apples and cut them into thin strips, fry them in a little olive oil, and deglaze with the strained cream. Bring to a boil briefly and thicken with a little pasta water, if desired. Season with salt and pepper. Toss the pasta in the sauce and sprinkle with strips of ham. Serve with grated cheese and crushed hazelnuts.
