Spaghetti Matriciana my way

Ingredients for 4 servings:

  • 500g spaghetti
  • 500 g bacon, streaky, at least 300 g
  • 2 garlic cloves
  • 1 onion(s)
  • n. B. Salt
  • Oil for frying
  • 4 cans of tomatoes, peeled or chopped, 400 g each

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 15 minutes

Brown the diced bacon in a pan. Briefly fry the diced onion and the crushed or finely chopped garlic for 1 minute. Deglaze with the tomatoes. Bring to a boil, put the lid on the pan, and simmer on low heat for 1 to 2 hours. Shortly before the end of the cooking time, cook the spaghetti al dente according to the package instructions. Season the sauce with salt. Gradually add the spaghetti to the sauce until the desired consistency is reached. There may be leftover pasta. Mix everything well and serve. It tastes best when it’s not quite so hot. You can also cook a green chili pepper in the sauce and remove it at the end.
